Ingredients:
Whole wheat Flour - 1 1/2cup
Baking Powder - 1 1/2 tsp
Baking Soda - 1 tsp
Salt - A pinch
Sugar - 3/4 ~1 cup
Milk Powder - 3/4 cup
Milk - 1 cup
Butter - 6 Tbsp(Room temperature)
Vanilla Extract -1 tsp
Fresh orange juice with pulp - 1 cup (chopped)
Method:
- Preheat oven to 350 degrees & line a 12 -cup, cupcake tray with cupcake liners, set aside.
- Wash and cut the oranges into halves & remove the seeds. Squeeze the oranges & take 1 cup of juice
- Sift first four ingredients & keep it aside.
- In a mixing bowl, Add butter & vanilla extract and mix it for a couple of minute.
- Then add sugar and milk powder & mix them for another 2 minutes.
- Add Milk & flour alternately to the butter mixture and mix it for another minute.
- Make sure the batter is of idly batter consistency.
- At this stage, add orange juice & mix gently.
- Divide batter evenly to the prepared cupcake tray.
- Transfer cupcake tray to oven & bake it for 25 ~30 minutes or until a toothpick comes out clean.

ReplyDeletewas looking for a simple recipe 4r eggless orange cake. most come with condensed milk. wanted something with ingredients available at home. milk powder option is nice.my doubt is...can i replace WWF with all purpose flour, in parts or full? by whole wheat flour do u mean the atta used 4r rotis?
btw u have not mentioned zest...does orange flavour come wihout zest?

HI Valli, You can replace WWF with all purpose flour fully or inpart. Yes I used roti/chapati flour for this receipe. Orange zest gives additional aroma to the cake. And it is optional. Try this and let me know how it resulted.

ReplyDeletemade this as a cake. since i've started baking very recently .. don't have a muffin tray.
i made the ingredients half 'coz i was baking an orange cake for the first time. came out well. i used both atta(pilsbury) and APF in equal measure. i added the zest of one orange.
i liked the texture too. the cake rose well.the taste was superb.(proof...a smile on my son's face...)
so this will be my reference 4r a simple eggless orange cake.
