Yellow Pumpkin payasam / butter squash Kheer / பரங்கிக்காய் பாயசம்

     This Yummy recipe is  Sivarathri  Naivediyam  in my home. Wants to share with you all, give a try & tell me know your comments..

Ingredients:

Pumpkin / Butter squash - 1 1/2 cup Shredded
Thuvar Dhal - 1/4 tbsp
Sago / Topioca / Javarisi - 1/4 tbsp
Sugar - 1 1/4 cup or required
Milk - 3 cups
Salt - A pinch
Water - 1 cup
Ghee - 1 tbsp
Broken Cashews - As required
Cardamon powder - 1/4 tsp

Method:

  • Heat a pressure pan with 1tsp of Ghee & fry broken cashews to slight brown color & keep it aside.
  • In the same pan, Fry Thuvar Dhal & sago for 3 minutes in medium heat.
  • When it slightly changes color, add 1 cup of water & cover the lid.
  • Pressure cook it for 3 whistle & keep it aside. Let pressure settle by itself. Dont mash Dhal or cook softly as we do for sambar, let it be 3/4th cooked  & grainy.
  • In another pan, add remaining ghee & fry shredded pumpkin for 10 minutes in low heat.
  • When pumpkin become soft, add milk to it & allow it boil in medium heat.
  • Once the milk reduce in to half the quantity, add cooked thuvar dhal &sago along with the cooked water to it & mix well.
  • Once mixture starts to boils, add sugar to it & mix well. let it cook it for 5 minute in low heat & turn off the stove.
  • Add Broken cashews & cardamon powder. Serve Hot or cold.

    You can use any dhal, but after trying out with moong & channa dhal I found Thuvar dhal had unique taste & texture with sago without spoil the pumpkin flavor..& my family members love it..
