Simple Fish Kurma

        Fish kurma is a mild twist to all sea food lovers.. Yes.. Grilled fish cooked in creamy sauce in low heat with flavourful ingredients and totally different from korma...Lets see the detail recipe..

Total time: 30 minutes
Preparation time : 15 minutes
Cooking time : 12 ~ 15 minutes
Serves 2 ~ 3

Ingredients:

One tilapia fillet, cut into required no of pieces
1 tsp red chili power, 2 tsp coriander powder
(or) 1 1/2 tsp kuzhambu milagai thool or to taste
A pinch of tamarind paste dissolved in 1 tbsp of water or 1 tbsp of tamarind juice extracted from tamarind pulp or according to taste
1/4 tsp turmeric powder
3 cups of water
Salt to taste
Cilantro for garnishing


For Marination:
1 tsp of lemon juice
1/2 tsp of red chili powder
A pinch of  turmeric powder
1/4 tsp of salt


For Grinding:
1 medium size onion or 1/2 cup of minced onion / 110 grams of onion
1 medium size tomato, chopped into pieces / 100 grams of tomato
1 tsp ginger garlic paste / 5 grams ginger garlic paste
1/4 cup of chopped coconut pieces
1 tsp poppy seeds
1 cloves, 1 cardamom, 1.2 inch cinnamon


For Seasoning:
1 tbsp oil + 2 tsp oil for frying
1 tsp fennel seed
1 bay leaves
Few curry leaves
1 green chili, split into two
Method:

Preparation:

  •  Mix marination ingredients together and add cubed fillets to it.
  • Mix and marinate for 10 minutes in refrigerator.
For gravy

  • Dry fry poppy seed in low heat till they pop up.
  • Add cloves, cardamom and cinnamon and fry for few seconds.
  • Transfer fried ingredients to another plate and keep it aside.
  • In same pan add 1tsp of oil and add minced onion. Fry for two minutes in a medium heat.
  • Add chopped tomato and fry till it become soft.
  • Then add ginger garlic paste and fry till raw smell disappear.
  • Remove and allow it to cool.
  • Grind onion - tomato mixture in to fine paste along with coconut pieces, fried poppy seeds & spices in a mixer grinder and keep it aside.
Cooking:

  • Drizzle little oil over the skillet and fry marinated fillets on both side in low heat or till done.
  • Meanwhile  heat 1 tbsp of oil in a pan at medium heat, add seasoning ingredients one by one.
  • When they splutter add ground paste and fry a minute. saute in between to avoid mixture sticks to the bottom of the pan.
  • Add turmeric powder, chili powder and salt. Mix and fry till oil separate from the mixture.
  • Add required amount of water and allow it to boil then add tamarind juice, Mix and reduce the heat.
  • Cook it in low heat for 10 minutes or gravy reduce to half of it consistency or required consistency.
  • Add 1/2 of minced cilantro & fried fish to the gravy and allow it cook for another 3 minutes without covering the pan and without sauteing in between.
  • Turn off the heat and Transfer to serving bowl.
  • Garnish with minced cilantro and serve hot...

Note: Any variety of fish can be used..Green chillies can be used instead of red chili powder for  white fish kurma...
