Alsande/ Melgor / Blackeye Beans Curry

Cooking time: 45 minutes

Serves: 4 ~ 6

Ingredients
1 1/4 cup Black eyed beans, soaked for overnight or for 8 hours
2 tbsp Vegetable oil
1/4 tsp mustard seeds
1 Onion, medium, sliced
8 Curry leaves
2 Green chillies, slit
2 tsp Salt
1/8 tsp Sugar

Masala Paste:
8 Kashmiri chillies or to taste
1 1/2 tsp Coriander seeds
1 tsp Cumin seeds
1/2 tsp Turmeric powder
1 1/4 cup Coconut, grated
6 Garlic cloves, minced
 1" Tamarind  

Preparation


  •     Boil the beans in water to cover till just cooked. Keep aside
  •     Grind the spices to a fine paste with 1/4 cup water
  •     Heat the oil in a pan, add mustard seeds, allow it to splutter, then add onion, green chilies and saute till soft
  •     Add the spice paste and curry leaves; saute for 2 minutes
  •     Add the boiled beans, salt, sugar, and 1 1/2 cup water; cook for 10 minutes on moderate heat.
  •     Serve hot with steamed rice
