          Since we recently moved to a new apartment, it is quite hectic with settling down and getting all the connection to be active.  I do not have internet connection until Dec 1st week, hence I have to skip this month's Blogging Marathon.   With the limited connection of USB modem I am posting this recipe for week 4 of BM 34.  I have paired with Chef Mireille of Gourmetglobal(dot)blogspot(com).   You can encounter lot of  wonderful recipes from her blog from all over the world, Which is very easy and simple to follow..

   After digging in to her space, I selected three recipes for this week Marathon which are going to treat you all for this week.. Today I sharing healthy salad from Senegalese Cuisine with Tankora masala which is the basic spice mix for their cooking.

Preparation time: 10 minutes
Soaking time: 8 ~ 24 hours
Cooking time 30 minutes
Serves: 4 ~ 6

Ingredients:
2 cups black eyed peas
3 cloves garlic
1 red bell pepper, chopped
1  large carrot, grated
2 teaspoon salt or to taste

For Tankora spice mix:
1 cup roasted peanuts
1 teaspoon ground white pepper
1 teaspoon ground ginger
1/2 teaspoon cayenne pepper

Method:
1. Wash and soak black eyed pea for 8 hours or overnight. Pressure cook it for 4 whistle or on a open  pot with garlic and 6 cups of water, until the peas are tender. Once cooked allow it to cool to room temperature.
2. Grind the listed spice mix in to fine powder and store it in air tight container.
3. In a large bowl, combine the cooked peas, carrot, bell pepper, lime juice and 1/2 cup of the tankora  spice mix.  Mix until thoroughly combined.  Let rest for 30 minutes and serve.
