Breakfast Burritos

          Today's recipe is from "The breakfast bible book" is Burritos.. Burritos are traditional Mexican food which is made from whole wheat. These tortillas are wrapped or folded into a cylindrical shape with filling it.  The fillings generally include a combination of ingredients such as Mexican-style rice or plain rice, refried beans or beans, lettuce, salsa, meat, guacamole, cheese, and sour cream, and the size varies. Typically, American-style burritos are stuffed with more ingredients than the primary meat and/or vegetable filling. (info - Wiki).    Breakfast Burritos are great choice to kick the day.

Preparation time: Less than 20 minutes plus 24 hours for soaking the beans
Cooking time: 30 minutes for filling mixture and 1 ~ 1 1/2 hours for cooking beans
Serves: 4

INGREDIENTS:
2 tbsp oil
1/2 cups cooked black beans  / ready to use black beans
1/4 cup tofu or paneer crumbled  or 3 eggs
1/4 cup chopped onions
3 tbsp red, green bell pepper, minced
3 tbsp shredded cabbage (optional)
1 cooked potato, chopped (optional)
1/4 tsp smoked paprika (optional)
Salt and Pepper, to taste
4 whole-wheat or corn burrito-sized tortillas ( I used Corn Jalapeno tortillas)

For Masala:
1 /4 tsp turmeric
1/ 2 tsp ground cumin
1/2 tsp chili powder or to taste

Breakfast Burritos


Method:
1. Wash and soak black beans for over night. Next day cook the black beans along with salt and smoked paprika with sufficient water on stove top. Once done, drain the water and use the water for making rasam. Rest the cooked black bean until use.
2.Heat oil in iron skillet or kadai,  add chopped onions and saute it for few minutes, then add remaining vegetables. Saute until it half cooked.
3. Throw in cooked potatoes and black beans. Stir gently and add all masala ingredients. Mix and cook it for another few minutes.
4. Finally, add scrambled tofu / paneer or eggs to the mixture.  Mix and cook it for 2 minutes or until done. Taste and add salt and pepper if necessary.
5. Before serving, Gently warm the tortillas on the hot griddle, Spoon 1/4 of the mixture onto the tortillas,  roll up and serve.

Note: 

  • you can use any vegetable. I have minced all veggies and sauted well according to my kids liking. 
  • You can use raw vegetables along with sour cream and mashed avacodas.  
  • If your tortillas are stiff, steam them separately ( one by one)  in idli cooker or steamer for minute.
